The sensor can be configured via Bluetooth v5.1 or via downlinks

Yes, it supports wireless OTA (Over-The-Air) firmware updates.

Yes, it has a data logging feature. It saves data when there is no LoRaWAN network and uploads the data when the network connection is restored.

The temperature sensor accuracy is +0.2°C @ 0-90°C.
